Couscous

Ingredients

Couscous:

  • 1 pack Al Safwa medium couscous
  • 1 kg lamb, boiled and cut into cubes
  • 2 cubes chicken stock
  • 2 onions, chopped
  • 1 cup chickpeas, boiled
  • 3 carrots, cut into cube
  • 2 sweet potatoes, cut into cubes
  • 3 zucchini, cut into cubes
  • 2 tablespoons tomato paste
  • 3 tablespoons olive oil
  • 5 cups water
  • ½teaspoon black pepper
  • 1 teaspoon hot red pepper
  • 1 teaspoon Al Safwa turmeric
  • Salt (if desired)

Instructions

Couscous:

  • In a frying pan, heat the oil over low heat.
  • Fry the meat in the oil until. Keep stirring until meat changes color.
  • Add the onions and stir until golden, then add the tomato paste, spices, chicken stock, and water. Stir constantly.
  • Cover the pot and let the mixture cook for 60 minutes until the meat is done.
  • Add the potatoes and carrots, and continue cooking for 10 minutes, then add the chickpeas and zucchini.
  • Leave the pot on the stove for 6 minutes.
  • In a separate saucepan add a small amount of stock and let boil over high heat.
  • Add couscous to the stock and cover the pot. Stir the mixture occasionally.
  • Set the pot aside to steam couscous.
  • Pour couscous into a serving dish and top with the meat mixture.
