Ingredients
Couscous:
1 pack Al Safwa medium couscous
1 kg lamb, boiled and cut into cubes
2 cubes chicken stock
2 onions, chopped
1 cup chickpeas, boiled
3 carrots, cut into cube
2 sweet potatoes, cut into cubes
3 zucchini, cut into cubes
2 tablespoons tomato paste
3 tablespoons olive oil
5 cups water
½teaspoon black pepper
1 teaspoon hot red pepper
1 teaspoon Al Safwa turmeric
Salt (if desired)
Instructions
Couscous:
In a frying pan, heat the oil over low heat.
Fry the meat in the oil until. Keep stirring until meat changes color.
Add the onions and stir until golden, then add the tomato paste, spices, chicken stock, and water. Stir constantly.
Cover the pot and let the mixture cook for 60 minutes until the meat is done.
Add the potatoes and carrots, and continue cooking for 10 minutes, then add the chickpeas and zucchini.
Leave the pot on the stove for 6 minutes.
In a separate saucepan add a small amount of stock and let boil over high heat.
Add couscous to the stock and cover the pot. Stir the mixture occasionally.
Set the pot aside to steam couscous.
Pour couscous into a serving dish and top with the meat mixture.
